Recipe
Many of you have asked me to share some recipes for baby-led weaning and here is one my baby LOVES Vegan Chili
Ingredients:
5 baby portobello mushrooms
1 zucchini
2 medium roma tomatoes
1 small yellow onion
2 garlic cloves
1 cup of kernel corn (fresh, frozen or canned)
1 can 6oz of tomato paste
1/2 cup of water
1 lb bag of red kidney beans cooked (can substitute with 1 can)
Chili powder, salt, pepper, cayenne pepper
Directions:
Slice the mushrooms. Dice the zucchini, tomatoes and onion. Mince the garlic.
In a pot over medium heat mix all of the veggies and cook for 5 minutes. Add the tomato paste and water and mix to incorporate.
Add the kidney beans with some of its broth, add the broth according to how runny you like your chili. Let it simmer for 3 minutes. Add 1/2 tbsp of pepper. After this you should take your baby’s portion out of the pot and set aside for him.
Last, going back to the pot, add 2tsp of salt, 2 tbsp of chili powder and cayenne pepper to taste.
